Recipe: Baked Pasta with Sausage and Peppers, courtesy of Ma Dukes

This is the best. It makes a ton of food, great leftovers, doesn't take a lot of time and turkey sausage!



This is something my mom makes, this is her recipe... but it probably came from somewhere else originally...
Ingredients:

1 1/2 lbs. Italian sausage, cut into 1 inch chunks
1 large onion, sliced
1 large green bell pepper, sliced
1 large red bell pepper, sliced
4 garlic cloves, sliced
1 28 oz. can tomato puree
salt
1 lb. penne pasta
8 oz. shredded mozzarella cheese
1/2 cup freshly grated Romano cheese


Step 1:  Preheat oven to 400.
Step 2: In a nonstick pan, cook sausage over medium high heat until browned, strring occasionally. Drain fat, then reduce heat to medium.
Step 3: Add onion, peppers and garlic, cook for about 10 min, or until vegetables are tender. Stir in diced tomatoes, tomato puree and 1/4 tsp. salt; simmer on low for 10 min.
Step 4: Meanwhile, bring a large pot of water to a boil with a dash of salt. Add pasta and cook until almost done. Drain pasta, return it to the pot, and stir in the sauce and mozzarella.
Step 5: Transfer pasta mixture to a 9 by 13 baking dish and sprinkle with Romano cheese. Bake uncovered for 20 mins. or until browned.


Also, I made some bread (There it is, rising so  nicely...) This is a picture of me spritzing the inside of the oven with water, so the bread gets a nice crust (which Kate found really hilarious for SOME REASON)







Yum! I haven't had time to make bread in a while but these memories are making me want to make the time. The recipe was just a simple french bread recipe from "How to Cook Anything".
