Make it yourself: Quiche

How to cook like my mom's mom - Grandma's Quiche Recipe.
This is really, really easy. It's also a great way to use up bits and pieces you have in your fridge. You can also make two and freeze one. My favorite!
Ingredients: ( I doubled the recipe, but listed the original amounts here)
2 eggs
1 1/2 cups shredded cheddar cheese
1 1/4 cup milk
pie crust (you can make this yourself, or Jiffy makes a super cheap box mix for pie crust)
salt/pepper
anything you want... frozen broccoli? onions? potatoes?

Procedure:
I started by "blind baking" the pie crust, baking it for about 5 min before filling, just to keep it from getting soggy. But... it didn't really matter because our pie crust came from a box and looked like this:




Kate put it well, "We can't all be like Snow White. She's a mysoginist anyway. And it's not sanitary to have birds help you bake pie."
I may not be an expert on "kitchen safety" or thawing meat "properly", but even I can tell you shouldn't let birds step on your pie.

Back to the main program,
Step 1: Get your pie crust under control
Step 2: Beat the eggs, add in the milk, cheese and whatever else you choose to add to the quiche. I used frozen broccoli, onions and a mix of cheddar, mozzarella, and goat cheese. As long as you chop it up small enough, you can put it in.




Step 3: Bake for about 20 min at 450, or until a knife slides out clean. You want to make sure that the center is set.

One for now, one for later. If you want to freeze a quiche so you can save it for later, just cook it for about half the time you cook the other one... this one was cooked for about 15 min. Then let it cool completely, wrap tightly in seran wrap and foil and put it in the freezer. You can finish cooking it in the oven when you want to eat it. YUM!

Kate: That was funny!
